This i s a white version of ‘Barolo Chinato which ’ is perhaps Piemonte’s most famous digestif. Chinato takes its name from the bark of quinine (or “China”) tree, which is the chief botanical here. Moscato from Ezio Cerutti and Bera is here mixed with an alcoholic solution of quinine, various herbs and spices.
