Posca Bianco is a Bianco Perpetuo, multi-vintage Perpetuae & Pignoletto as it is constantly refilled with the youngest vintage. The idea behind this wine is that it combines the mature characteristics of an older wine with the crispness, fruitiness, and freshness of the youth.

In 2005 Federico Orsi bought Azienda Agricola San Vito with the help of his family. Federico grew up in Brazil and returned to Bologna, his home city, to study business. However, the opportunity to buy the vineyard led him in a very different direction. Instead of studying business Federico began to read all he could find on holistic agriculture and converted the estate to biodynamics within its first year. Minimal intervention winemaking was the objective and by 2009 the wines were all vinified with native yeasts, un-fined, unfiltered, and only lightly sulfured at bottling.
