Antonio and Daniela Di Gruttola always love to make a PetNat. Aglianico is pressed directly after fermentation and then put into the bottle the following May along with some sweet Aglianico from the previous vintage. The second fermentation takes place in the bottle and there is no disgorgement, resulting in a dry sparkling wine with Griottes cherry, pungent acidity, and earthy minerality.

Service tips: Serve it at 11 C with fried chicken. Fish and chips is another great option.
